Roasted potatoes and carrots

Check out my recipe for roasted potatoes and carrots.  If you are looking for a dish to pair with wild game, beef, fish or even for breakfast, roasted potatoes and carrots is right for you.  Roasted potatoes and carrots is an easy meal to make plus it is cheap.

This recipe can be made for only a couple of dollars(if that).  It is even cheaper if you use ingredients out of your home garden.  I love making this recipe for my family in the fall with fresh potatoes and carrots from the garden.  Throw on some of you own dehydrated basil or oregano and you can be proud to say that almost all of the ingredients came from your own hands.

The only ingredients you need to make this recipe are potatoes, carrots, onions, olive oil, salt and basil.  To start the recipe, the first step is to dice up the potatoes, onions and carrots in to little cubes.  I like to cut mine up so they are a little bigger than a sugar cube.

Once this is complete, combine the potatoes and carrots in a mixing bowel and add a tablespoon of olive oil plus basil.  Mix everything up so the oil is evenly distributed over the potatoes and carrots.

Once the ingredients have been mixed, pour them onto a baking sheet.  One important thing to remember is to make sure the baking sheet has raised edges.  If you use a flat cookie sheet, the oil will run off and make a huge mess.  Trust me, I know this one from experience. 

Put the baking sheet into a 400 degree oven and let the potatoes and carrots cook for 20-25 minutes or until they are soft.  Make sure to check periodically to make sure that nothing is burning.

Once the potatoes are cooked to your liking, pull them out to eat or put them under the broiler for a couple minutes to brown them further.  Throw on some salt to taste and you have home made roasted potatoes and carrots.
